- Preheat oven to 350 degrees.
- In a large mixing bowl:
- beat one or two eggs,
- blend in 2/3 c. sugar, 1/3 c. melted margarine, and 3/4 tsp. grated lemon rind,
- mash in two ripe bananas, and
- stir in 1/2 c. broken pecans or walnuts.
- In a separate mixing bowl, sift together:
- 1 3/4 c. flour,
- 2 1/4 tsp. baking powder, and
- 1/2 tsp. salt.
- Combine the ingredients from the two mixing bowls, and place the batter in a loaf pan, a couple of small loaf pans, or in muffin molds.
- Place a few whole pecans or walnuts on the top surface(s).
- Bake until a toothpick comes out clean – about an hour if baked as a single loaf.
