Batatas com coentro


Batatas com coentro (potatoes with cilantro)

This is a very simple but remarkably tasty Iberian dish.


Ingredients:

  1. small red potatoes
  2. cilantro
  3. olive oil
  4. coarse-ground pepper
  5. coarse-ground salt


What to do:

  1. Set the oven to 400 degrees.

  2. Clean the potatoes and cut them in half.

  3. Rub them liberally with olive oil.

  4. Bake at 400 degrees for 25 minutes.

  5. While the potatoes bake, clean the cilantro and tear the leaf clusters off.

  6. After the potatoes are removed from the oven, add some more olive oil to a cast iron skillet and bring it to a high temperature.

  7. Put the potatoes in skin side (outside) half down.

  8. While they’re browning on that side (it will only take a minute):
    1. Grate (on a very coarse setting) pepper and salt onto the cut (flat) side which is now facing up.
    2. Liberally sprinkle the cut sides with cilantro.

  9. Turn the potatoes over onto the cut side (the cilantro will crisp up, or burn, but that’s OK).

  10. Remove and serve as soon as they've browned (it will only take a minute).
